Vineyard
A vineyard of more than 25 years located at 1,100 meters above sea level. Its orientation is West-East, which provides a rapid natural runoff of water from rain and snowmelt. The driving system used is the high trellis system.
Soil Composition
Of alluvial origin, poor and sandy-loamy texture, with important presence of stone and calcium carbonate. These soils are defined as “calcareous” and convey great elegance and complexity to wines.
Harvest
Manual, in small plastic boxes of 12 kg
Winemaking
Upon entering the winery, the grapes go through a double-selection belt system to band and vibrant. A cold maceration at 8°C is performed for five days. Alcoholic fermentation takes place at a controlled temperature, close to 30ºC. The wine (80%) then goes into second-use French oak barrels where it undergoes malolactic fermentation and rests for eight months. Once placed in the bottle, it is stowed for a minimum of three months, until reaching the optimum point of consumption.
Tasting notes
Intense maroon red color. It has notes of red fruits (raspberry, blackberry) pepper, herbs and spices (jarilla, thyme, rosemary) and mineral (graphite). Ideal for pairing with tomato-based dishes, vinegar-based sauces or rich legumes such as beluga lentils, game meats, empanadas, stews, etc.
