VINEYARD

A vineyard of 25 years of age situated at 1,100 meters above sea level. Its West-East orientation provides a fast natural runoff for rain and defrosting waters. The growing-guidance system is done by high vine trellis.

SOIL COMPOSITION

Alluvial origin, with a poor and sandy loam texture and a remarkable presence of stones and calcium carbonate, which define them as “calcareous” and convey great elegance and complexity to the wines.

HARVEST

Hand-picked in small plastic boxes of 12 kg. Yield: 5,000-6,000 kg. per hectare.

WINEMAKING

After a cold maceration process prior to its fermentation, wines ferment with indigenous (natural) yeasts in small concrete vats of 5,000 kg. Fermentation lasts approximately 15 days at an average temperature of 26 °C. Wine is then aged for 12 months in new, 1st and 2nd use French oak casks.

TASTING NOTES

Complex and deep. Violet red color with ruby tones. Aromas of black fruits (plum, blackberry), spices (pepper), herbs (oregano, menthol), flowers (violet) and mineral notes. Tertiary aromas are also found, due to its time in bottle. The palate is broad, with great mouth feel, balanced and with a lingering finish. It is a wine that evolves minute after minute, and stays for a long time on the palate after drinking it. Ideal for pairing with braised short ribs or grilled steak with rosemary, juniper or lavender.
