VINEYARD

A vineyard of 25 years of age situated at 1,100 meters above sea
level. Its West-East orientation provides a fast natural runoff for
rain and defrosting waters. The growing-guidance system is done
by high vine trellis.

SOIL COMPOSITION

Alluvial origin, with a poor and sandy loam texture and a
remarkable presence of stones and calcium carbonate, which
define them as “calcareous” and convey great elegance and
complexity to the wines.

HARVEST

Hand-picked in small plastic boxes of 12 kg. Yield: 9,000 kg per
hectare.

WINEMAKING

When entering the winery, grapes are subject to a double-
selection process through a vibrating conveyor. A cold maceration

is carried out at 8 °C during 5 days. Alcoholic fermentation is
performed at a controlled temperature with manual piegeage. The
wine (80%) is then aged in 2nd use French oak for 8 months. Once
bottled, it is stored for a minimum of 3 months for reaching its
optimum point.
